A collaboration event with Shikisai Dining Spring, a favorite of chefs, is finally happening!

Although the details of the dishes have yet to be decided, L'asymétrie will value the flavor of the ingredients and express a French style through the combination of ingredients, the balance of sourness, saltiness and oil, and cooking methods.
So, in a sense, a collaboration with Japanese cuisine is definitely possible.

Of course, there are many delicious vegetables and fruits in Tachikawa, so I use them, but there is a reason to take them from other than Tachikawa.
A wine that carefully selects dishes that can only be eaten in Asymmetrici without being bound by the French frame, incorporating various homemade seasonings, fermentation / aging, spices, etc. that are homemade based on the rice koji received from the Kitajima Koji store in Tachikawa. We will prepare with our view of the world.
